Coconut Banana Pancakes



Hi everyone! I'm Lauren and I blog over at Sweet and a Dash of Savory. Today, I'm going to share my experience with making these healthy Gluten Free Coconut Banana Pancakes :)

I came across this recipe while flipping through a Bon Appétit magazine and I immediately knew I was going to make it.

My brother, Alex, was diagnosed with Celiac disease in 2006. Celiac disease is basically when your body attacks itself, through immune responses, when it's exposed to gluten. In case you didn't know, gluten is categorized as wheat, barley, oats and rye. Now, my brother was only five at the time he was diagnosed, so in addition to being a picky eater, he had to have gluten completely eliminated from his diet. Back then it was hard for my family to find options for him to eat, especially when we went out. Anything we could recreate gluten free in the kitchen would be such a treat for him.  Now, we are so lucky that there are so many more options and products out there that are gluten free. I know five year old Alex would have loved these pancakes, and I know now twelve year old Alex thought they were delicious!




For this recipe instead of regular flour, it called for a little bit of coconut flour that was mixed into the mashed banana. I would definitely suggest Bob's Red Mill brand coconut flour if you're ever going to make this recipe. Another good tip is make sure your eggs are room temp when your mixing them into the pancakes. I'm a pretty impatient girl, so I was debating about taking the time out for the eggs to sit, but just do it. Trust me. It always comes out better in the end :)



Make sure you mash up those bananas reeeaaally well, if you want a nice, smooth, airy pancake.




Now the recipe called to grease the pan with coconut oil, but I didn't have any at home, so I just used butter and it was fine. But if you do happen to have coconut oil in your pantry, go for it!!




Well, there you go, Healthy Gluten Free Coconut Banana Pancakes! If you know someone who suffers from gluten intolerance or Celiac disease, make these for them! I know it will put a smile on their face :) But you should make a batch for yourself, even if you can have gluten, because everyone deserves a good stack of pancakes (and they're healthy so it's totally acceptable in my book if you go up for seconds)

Gluten Free Coconut Banana Pancakes
Serves 4
Recipe from Bon Appétit

8 large eggs, at room temperature
1 cup mashed overripe banana
1/4 cup water
1 1/2 tsp. pure vanilla extract
1/2 cup coconut flour
2 tsp. baking powder
1 tsp. kosher salt
Coconut oil, for greasing
Berries and maple syrup for topping


1. In a medium bowl, beat the eggs with the banana, water, and vanilla. In another medium bowl, whisk the coconut flour with the baking powder and salt. Whisk in the egg mixture until incorporated

2. Heat a griddle or large non-stick skillet and grease with coconut oil. For each pancake scoop 3-tablespoon mounds of batter onto the griddle and cook over moderate heat until golden on the bottom and bubbles just appear on the surface, about 3 minutes. Flip and cook until risen and firm, about 3 minutes longer. Repeat with the remaining batter. Transfer the pancakes to plates and top with maple syrup or berries
