2 Ways to Enjoy Pumpkin Pie Spice

This shop has been compensated by Collective Bias, Inc. and its advertiser. All opinions are mine alone. #DelightfulMoments #CollectiveBias

I get it. It's totally predictable, but I can't help it! I love Pumpkin Pie Spice everything. I get maybe a little too excited when I see pumpkin items popping up on the shelves at Walmart. I mean, really, I love it all. Candles, muffins, lattes, even the mini pumpkins I use to decorate my house. My two favorite ways to enjoy pumpkin in the autumn though have got to be in my morning coffee and in a bowl of ice cream. Yes, ice cream. Keep reading, it will make sense. I promise!!

Coffee.

Coffee creamer is a staple around here. It's the easiest and best way to make a simple cup of coffee perfect. Especially when the creamer is Pumpkin Pie Spice! This International Delight Pumpkin Pie Spice Coffee Creamer is my favorite thing to add to my coffee as I run out the door in the morning. In my opinion, this is even better than the super expensive pumpkin lattes you can get out there.

Ice Cream.

Here in Memphis, it still feels like summer so my next favorite way to enjoy pumpkin is in some homemade ice cream using a secret ingredient... International Delight Coffee Creamer. It's so easy to make, requires minimal ingredients, and comes out creamy and absolutely delicious. Even my pumpkin skeptical husband likes this!

The homemade ice cream recipes I've used in the past have all had lots of milk and cream, so I figured I could easily substitute flavored coffee creamer, and man oh man did it turn out better than I expected!! I used my Kitchen Aid Ice Cream Maker attachment and the results were pretty much perfect. Here's the recipe I put together:

What are your favorite ways to incorporate pumpkins into Autumn?

So, did you know that some Walmarts are having demos?? Well, they are. Check out this list and see when there is one near you. It'll be the perfect time to pick up your own coffee creamer to make some ice cream.

Homemade Avocado Ice Cream

Yes. You read that title correctly. This deliciously sweet and vibrantly green ice cream is made with real avocados. Lately, Jeremy and I have been on a bit of an avocado kick. We're relatively late to this party, but we've started putting avocados on just about everything... tacos, salads, sandwiches, and now ice cream.

We were watching an old episode of Good Eats and Alton Brown made some avocado ice cream. We knew we had to try this! I'll be honest, I was a little bit scared to take the first bite. The last thing I wanted was for my ice cream to taste like a salad but I was pleasantly surprised! It does taste like avocados but in a completely surprising and delicious way. It's sweet and creamy and definitely refreshing. This will be something we make again.

Here's the recipe I used!

Homemade Cookies & Cream Ice Cream

Yes, I know I have a million and one things to do since my wedding is in 4 (!!) days but it's just sooooo easy to make homemade ice cream that I could not help myself. After making peach ice cream a few weeks ago, I could not wait to try a different flavor. With the KitchenAid Ice Cream Maker attachment, it literally could not be easier (this is not a sponsored post - I just loooove this fun kitchen gadget). All you do is add the ingredients and turn it on. I love that we can always have homemade ice cream in our fridge!

We decided to try Cookies & Cream and pretty much made it up on the way. We started with a vanilla base and just added some Oreos. I added the crushed cookies while the ice cream was still churning so it made it into more of a chocolate ice cream. It's delicious. It did not last long in our freezer!

Here's how our recipe turned out:

This one will deffffinitely be made again in this house!! anddd the next time we make it, we'll be husband and wife!!

Homemade Peach Ice Cream

Even though it's only May, it's starting to feel like summer here in Memphis. Not that I'm complaining, I love this warm weather!

Warm weather, though, means homemade ice cream. Jeremy and I received a gorgeous KitchenAid mixer andddd the ice cream maker attachment as gifts and I absolutley could not wait to put them both to use.

Since I was in the mood for something refreshing, I decided to try my hand at Peach Ice Cream. There are tons and tons of recipes floating around the internet so after skimming over a bunch, I finally chose this recipe. It seemed simple, not very time consuming, anddddd it used the KitchenAid attachment.

I am absolutely floored and very pleasantly surprised at how easy it is to make homemade ice cream. Once you combine all the ingredients, you just turn the mixer on and wait about a half hour. After we took our first bite and realized how delicious it turned out, my mind started racing. There are so many flavors we could make!! I have a feeling there will be lots of ice cream made this summer.
