What's for dinner... (8)

It's been a while but I'm linking up with Mallorie's What's For Dinner Linkup! To some of my new followers, if you don't follow her blog you are totally missing out.

Soo when my parents were in town for Thanksgiving I got an early Christmas present.. a Crock Pot! I kept seeing recipes and things on Pinterest for crock pots that I wanted to try by couldn't because I didn't have the main ingredient.. the crock pot.

There are so many vegetarian options out there and these things are easy to make.. that's right up my alley.

I haven't used it yet, but here are some things I really want to try.

What's for dinner... (7)

Something that I've realized linking up with Mallorie each week is that we're pretty good at making different things for dinner all the time. Ok, we don't make crazy interesting things and sure, we do throw in some duplicates, but really not very often! Go us!


There's nothing quite like tomato soup and grilled cheese to warm up your insides on a cold day. The grilled cheese got a little overcooked but it was still yummy deliciousness, especially when dipped in the soup.


We got healthy too this week! We made some salads for dinner. Included in this was some lettuce, green olives, cheddar cheese shreds, and croutons. Jeremy added some chicken slices to his.


Last night, I felt like a true southerner.. we cooked up some catfish! By we, I really mean Jeremy, but I was there giving him support so that counts, right? Catfish, corn, and baked beans.. yum!

What's for dinner... (6)

I can't believe it's already Thursday and time to link up with Mallorie at Home is with you... with "What's For Dinner?" This week has totally flown by! Anyways, let's get down to business. I did a couple different things in the kitchen this week. Nothing mind blowing, just different. 


I made some vegetarian chili (not from scratch, although I'd love to learn how to do that) with some corn bread.. it was so perfect on the cold day we were having here.


Eggs in a Basket is something that I love to make but really haven't in a while. If you don't know what that is, or if you call it by a different name, all you did is cut a hole in the center of a piece of bread and crack an egg in it. You just cook it in a frying pan.. I like to add some cheese on top too. It's soooo good, especially if you like runny eggs. If you don't like runny eggs, just give the egg a little scramble when you crack it. 

 
Last night, Jeremy and I made another batch of my Mom's macaroni and gravy.. the first time wasn't a fluke.. I guess I'm actually Italian after all! It was definitly just as yummy and delicious as the first time we made it.

What's for dinner... (5)

I have been so super swamped with work that I have literally not cooked a meal in my kitchen in a while. The only thing I did this week was bake brownies.. does that count? Anyways, if i had my way this is what I would have made this week...





Spinach Lasagna Roll-Ups with some Oreo cupcakes for dessert... yum.

What's for dinner... (4)

I was so good this week! I took pictures to link up with Mallorie at Home is with you...

 
 
On Sunday, I went to a baby shower (Congratulations Maria!!) but afterwards Jeremy and I whipped up some spaghetti using some gravy we had frozen from the last time we made a batch. Mom, since I know you now read my blog, it tastes so good even after being frozen! We did good :) We are definitely going to be making some more.

 
Monday, after a busy day at work (hockey season is approaching WAY too quickly), Jeremy told me he was bringing dinner over. His mom had made some vegetarian lasagna and sent me some. It was delicious! Last time I saw her she mentioned to me that she had found a recipe that looked pretty good... it really was! I even had some leftovers the next day for lunch.

 
I worked late on Tuesday, yuck, no fun. I ended up eating hummus at my desk hah how depressing. BUT to make up for it, when I came home, I baked a blueberry pie! Ok, I'll be honest.. I cheated.. I used frozen pie crust and canned pie filling. Sometimes though that's all you need. I would like to be able to make my own pies from scratch one day but for now, the fake stuff is working just fine for me.

 
 
Last night was a soup night.. nothing too exciting there! My Mom did call me and asked me some questions about our Mexican Crescents.. she was making them for dinner because she saw them on my blog. Too funny.

This week there wasn't much kitchen innovation but that's alright sometimes. I'm just happy that among all the busyness right now in my life I'm able to still have time to sit down and eat a meal at home.

What's for dinner... (3)

I know I'm a day late with my What's For Dinner post but I didn't have any photos or really any good recipes from this past week.. until last night. 

We did our usual Mexican crescents which come out better and better every time we make them.. if you haven't done this yet I recommend it!! 



We also tried something new. Through twitter I came across this recipe for fried apple slices. Now, if I've learned anything from living in the South it's that everything is better when fried so we gave it a shot. 





They came out pretty good! Definitely a good fall treat.

What's for dinner... (2)

I hope everyone has had a great week! I'm linking up again with Mallorie at Home is with you....


On Sunday, I tried something that I had been wanting to do for a while. I turned that pot of strawberries into yummmmmy fruit leather! I am seriously a little kid and love that stuff. As soon as I saw recipes floating around on Pinterest I knew I'd have to try it out. The only thing that I really didn't like was that it takes alllllll day for the strawberry mixture to actually become leathery. The recipe I looked at said 6-8 hours... it took way longer than that. If anybody else has done this and knows a quicker method PLEASE let me know, that'd be great, thanks :)



I was alone on Monday night and not really feeling so good so I made myself some soup. Yes, it was August and about 100 degrees outside and I was sitting here eating hot soup. Whatever, it made me feel better.. and so did the snap peas. Lately, I've been all about snap peas eating them right out of the bag. So delicious. 


On Tuesday, Jeremy got creative with the random ingredients I happened to have in my kitchen. What we ended up with was some angel hair pasta, steamed broccoli, and shrimp all tossed in butter and some garlic salt. It was so simple but came out really good. Oh, and we had crescent rolls on the side because apparently it wouldn't be a food post without some.


Anddddd those are all the pictures I have. Hey, it's a step up from last week's post! I guess I'm getting better. Can't wait to read what everyone else had for dinner this week to get some kitchen inspiration.

What's For Dinner...

Linking up with Mallorie at Home is with you... for her first link up! By the way, if you haven't been to her blog, you should totally check it out.. it's great! Now, I wasn't necessarily prepared for this this week, BUT next week I am going to make a conscious effort to take a picture of dinner to link up with her again. This is a great idea.. I'm always looking for new things to make for dinner, especially vegetarian things. 

 
Mexican pizzasss.. soooo good. Jeremy got creative with this one and elaborated on our Mexican crescent recipe. He put Spanish rice, black beans, cheddar cheese, and jalapenos inside. In his he also put some grilled chicken. On top, there were green olives, pico de gallo, and more cheese. After being in the oven for a bit we added some sour cream. They came out delicious! It kinda seems like we only eat Mexican food.. I promise we eat different things.
